It seems that your parents are very religious and I think you should politely try to explain them that Bhagwan has give a heart to all of us which has capability of love human being. If God would not like inter caste marriage then why He has given heart which loves irrespective of caste, creed etc.
I think you should give examples of marriage of Lord Krishna with Rukmani and marriage of Arju with Subhadra..that God has supported loved ones..
You tell your parents that taking 7 pheras aroud holy fire means to live in 7 lives together. What will be the use of all these ceremonies if you marry with some one with whom you can not make such promise from heart...It is not necessary that people of particular caste, country or religion are good. So tell parents that sankaar and pyaar is what important and not the caste.
A true relationship is based on vishwaas and pyaar..trust and love and if this exist then only is the meaning of all ceremonies of marriage...I know it will not be simple to convince them so easily but hopefully if you by understanding the pshychology of your parents explain them and speaik with them in nice manner then I hope they will realize whats right thing and Best of Luck to you.
